St. George Verte Absinthe 750ml
Description
Chase the Green Fairy with St. George Absinthe Verte, where America’s craft distilling pioneers create absinthe that honors tradition while adding California innovation. This isn’t pastiche or approximation but genuine absinthe made with traditional botanicals and methods, proving that authentic absinthe can emerge from unexpected places. The result stands proudly among global absinthes while expressing unique character.
The nose presents classic absinthe complexity with St. George’s innovative touches. Grand wormwood provides the essential bitter foundation, while anise and fennel complete the holy trinity. But additional botanicals add California character – perhaps local herbs, unique finishing techniques, or subtle innovations that distinguish without departing from tradition. The louche effect when water is added shows quality distillation and proper botanical balance.
On the palate, Absinthe Verte delivers the full traditional experience with craft distilling refinement. Initial anise sweetness is quickly balanced by wormwood’s characteristic bitterness, creating the tension that defines great absinthe. The botanical complexity unfolds gradually – beyond the trinity are herbs, flowers, and roots that add layers. St. George’s innovation might show in unusual botanicals or perfect integration that makes this exceptionally smooth. The traditional water dilution transforms the experience, opening flavors and creating the ritual that makes absinthe special. Mid-palate reveals why absinthe captivated artists and writers with complex, almost psychedelic flavor combinations. The finish is long and complex, with alternating waves of herbs, anise, and pleasant bitterness. This is absinthe for modern aesthetes, honoring tradition while proving that American craft distilling can master any category. St. George Absinthe Verte stands as testament to craft distilling’s ambition and achievement.
