Prolijo 750ml
Description
Enter the meticulous world of artisanal mezcal with Prolijo, a brand whose name – meaning ‘neat’ or ‘meticulous’ in Spanish – perfectly captures their approach to traditional mezcal production. This expression represents the intersection of time-honored techniques and obsessive attention to detail, where every step from agave selection to bottling is executed with precision. The result is mezcal that showcases not just the spirit of Mexico but the art of perfectionism applied to ancestral methods. The attention to detail is evident from the first nosing. Clean smoke mingles with bright agave notes, creating a balanced profile that speaks to careful production. The roasting process has been perfectly calibrated – enough to add complexity without overwhelming the agave’s natural character. Notes of citrus, particularly lime and grapefruit, add brightness, while subtle earth and mineral notes ground the experience. There’s a precision to the aroma that distinguishes Prolijo from more rustic mezcals, showing that traditional methods and refinement aren’t mutually exclusive. On the palate, Prolijo delivers mezcal excellence through meticulous balance. The initial taste brings sweet cooked agave perfectly integrated with gentle smoke, creating harmony rather than conflict. The texture is notably smooth and refined, speaking to careful cuts during distillation. Flavors unfold in organized layers – tropical fruit gives way to pepper spice, followed by herbal notes and a subtle minerality. The smoke element threads through the entire experience, adding depth without domination. Mid-palate reveals additional complexity with hints of vanilla, green herbs, and that distinctive volcanic earth note that speaks to terroir. The finish is clean and persistent, with smoke slowly yielding to sweet agave and citrus. This is mezcal for those who appreciate that true craftsmanship lies in the details, where traditional production meets modern precision. Prolijo proves that ‘neat and meticulous’ isn’t just a name but a philosophy that elevates mezcal to new heights of refinement.
