Guyomar Wilfred Mourvedre Paso Robles 2021 750ml
Description
Guyomar Wilfred Mourvedre Paso Robles 2021 is a dark, savory red from a small family winery on Paso Robles’ westside. Mourvedre leads the blend, with Grenache and Syrah adding lift, polish, and depth. As a result, the wine feels grounded, layered, and full of quiet strength. The nose opens with wild blackberry, black cherry, lavender, and dried herbs. Then the palate moves into dark plum, black pepper, olive tapenade, leather, and warm earth. Mourvedre gives the wine its deep, savory core, while Grenache adds a touch of red fruit. Meanwhile, Syrah brings darker spice and a smooth middle.Guyomar’s estate vineyard sits in the Templeton Gap area of the Willow Creek District, where westside hills benefit from cool coastal air. Because of that setting, Wilfred shows ripe Paso Robles fruit with fresh balance and firm shape. The dry-farmed vineyard also adds depth and a strong sense of place. At 14.5% ABV, this 2021 red offers richness without excess weight. The tannins feel fine and steady, while the finish lingers with dark fruit, herbs, spice, and mineral notes. It has enough structure for the cellar, yet it also opens well with a short decant.Serve slightly below room temperature. Then pair it with herb-crusted lamb, braised beef, roast duck, mushroom stew, charcuterie, or aged cheeses.
