Balcones Pot Still Bourbon Whiskey 750ml
Description
Balcones Pot Still Bourbon represents the innovative spirit of Texas craft distilling, where traditional bourbon-making meets the bold, unconventional approach that defines this Waco-based distillery. Using 100% pot still distillation – a rarity in bourbon production – Balcones creates a spirit with exceptional texture and flavor concentration. This method, more common in Scotch and Irish whiskey production, allows for greater control over the distillation process and results in a bourbon with remarkable depth and character that stands apart from column-still bourbons. The pot still influence is immediately apparent on the nose, creating a richness and intensity that sets this apart from traditional bourbon. Classic notes of caramel and vanilla are present but amplified, with additional layers of butterscotch, honey, and brown butter creating an almost pastry-like quality. The Texas heat accelerates maturation, adding pronounced oak notes despite the relatively young age, while unique elements like roasted pecans, cinnamon, and a hint of mesquite smoke speak to its Lone Star State origins. There’s also a distinctive fruitiness – think baked apples and pears – that adds complexity. On the palate, the pot still distillation creates an incredibly rich, almost creamy texture that coats the mouth with flavor. Initial sweetness of toffee and brown sugar gives way to more complex notes of dark chocolate, espresso, and toasted grains. The Texas climate’s influence is evident in the pronounced oak character, which adds notes of leather, tobacco, and baking spices without becoming overly tannic. The finish is long and warming, with lingering notes of caramel, nuts, and a distinctive earthy quality that’s become a Balcones signature. This is bold, uncompromising bourbon that showcases how craft distillers can honor tradition while creating something entirely their own.
