Aviation Old Tom Gin 750ml
Description
Aviation Old Tom Gin resurrects a nearly forgotten style with modern sensibilities, creating a bridge between gin’s past and present. This limited expression pays homage to the sweeter gins of the 18th and 19th centuries while maintaining the refined character that defines the Aviation brand.
Old Tom occupied the middle ground between genever and London dry gin, offering subtle sweetness that made it the preferred base for many classic cocktails. Aviation’s interpretation stays true to this heritage while applying contemporary craftsmanship. The botanical blend starts with their signature recipe – lavender, cardamom, sarsaparilla – then adds a touch of raw sugar during distillation, creating natural sweetness rather than the artificial additives found in lesser attempts at the style.
The flavor profile presents an intriguing paradox: fuller and rounder than the flagship Aviation, yet maintaining exceptional balance. The sweetness doesn’t mask the botanicals but rather amplifies them, like turning up the volume on a perfectly mixed song. Lavender becomes more pronounced, cardamom gains depth, and the overall mouthfeel becomes luxuriously silky. The finish lingers longer than typical dry gins, leaving traces of spice and floral notes that beckon another sip.
For cocktail historians and adventurous drinkers, Aviation Old Tom opens doors to forgotten classics. The Martinez, Tom Collins, and Ramos Gin Fizz all shine with this expression, revealing why these cocktails became legendary. Modern bartenders appreciate its versatility in contemporary creations where a touch of sweetness can balance bitter or sour elements. This isn’t just gin – it’s liquid history, expertly crafted for today’s palate.
